Victor Valley College proposes to improve the Restaurant Management Program with the acquisition of instructional equipment and the development of Hospitality, Tourism, and Recreation Certificate Program. Equipment will consist of an Expresso Entertainment Center, a Food Vending Trailer, a Gas/Convection Oven, and a Vienna Beef Counter Cart. Both the equipment and the certificate program will utilize an expansion of entrepreneurial skills deemed necessary by the Restaurant Management Advisory Board.

The objectives will focus on the following:

1. Increase the learning and skills of 100 students through the development of a new certificate program in Hospitality, Tourism and Recreation.

2. Seventy percent of the 100 students enrolled in classes with integrated entrepreneurial skills will complete the program and will likely possess the skills that they will need to succeed in the workplace.

3. Increase the knowledge of the faculty in the Restaurant Management Program by completing training on the instructional equipment, and utilize the best practices learned in the classroom as evidenced by the revised curriculum outlines and teaching strategies.

Activities will focus on curriculum development for the Hospitality, Tourism, and Recreation Certificate Program, and staff development activities to upgrade skills in the use of the new equipment. Training will be provided for the staff and students on the proper use of the instructional equipment. Formative and summative evaluation will be tied to the completion of the project objectives and activities. We plan enrollment for 100 students and expect course completion of 75% of students.
